nice way to end the weekend...
After a busy weekend mixed with a few surprise real estate appointments and a lot of yard/house work I'm ready to relax and make a nice dinner. So, tonight's menu - Wild Alaskan salmon with toasted sesame oil/ginger/wasabi/lemon juice vinaigrette, roasted with fresh dill, fennel, garlic and smoked sea salt. While it is roasting, I threw together a salad and made some spinach couscous - such a quick and yummy side! While Jon is finishing leaf blowing/mowing/building a fence...the kitchen (actually our entire 900 sq ft apartment, ha) is heating up and smelling quite delicious!! Now off to open a bottle of Pinot Noir to go with the feast...
